I’m saying yes.
My daily dose of bran (oh god I’m so old) comes in the form of a cereal called All Bran. I’m nutty about the stuff (although I also love Grape Nuts, come to think of it).
There’s a lovely Brownie recipe on the box. Here it is with my modifications noted.
2/3 c flour—I use 1/3 AP 1/3 whole wheat
1/4 t salt
1/2 c cocoa powder
2 eggs
1 c sugar — I use a few less tablespoons
1/3 c All Bran Buds cereal
1 t vanilla — I use 2 t of bourbon vanilla
1/2 c (one stick) butter, unsalted
Add in’s (rough amounts): 1/2 c walnuts (barely chopped)*
1/2 c Chocolate chips*
1/3 c candied ginger, cut into small pieces— see photo.
1/2 c shredded coconut
Fat pinch of Maldon or another crunchy salt.
Really, any nuts (tho I prefer porous ones like pecans and walnuts), any dried fruit (cut apricots and cherries), you get the idea. Within reason, the only limiter is the depth of your brownie pan.
Directions:
In a small bowl whisk together the flour, salt, and cocoa powder. Set aside. Grease a brownie pan (8”x8”) with cooking spray. Preheat the oven to 350 degrees.
In a large mixing bowl, beat eggs until light. Gradually add sugar. Beat until fluffy. Fold in cereal, vanilla, and melted butter. Then fold in flour and add-in’s. Spread evenly in the prepared bowl brownie pan. Sprinkle with flakey salt.
Bake @350 for 25 to 35 minutes. Sorry about the imprecision because if over-baked, they become dry and very crumbly. Begin checking every 5 minutes at 25 minutes. In my oven they take 32 minutes. Use a toothpick to check for doneness.
These cake-like branies stale quickly.
