It has been so long since I've written anything on this blog. I apologize to anyone who has noticed my absence (like my mum).
I have been cooking though. A few weeks ago I made pork belly 'dogs' using hot dog rolls, and brined pork belly. The pieces were cut to fit a bun and grilled on a large Lodge griddle over coals.
Yumm-O. The belly pieces went into buns with a schmear of strawberry butter,* cucumber slices and kimchi.
At the same party, I broke out some of the mead that I made last summer. It's been aging for a year. The strawberry mead was fantastic when young. Not as impressive when aged.
But... the pear mead is transcendent. I don't even like pears but I loved the mead.
It was a lovely party, if a bit somber. The fete was a birthday party for Jay Lake, who passed away a week shy of his 50th birthday. He would have loved the belly dogs.
Now I've bummed myself out. Eat belly. It's delicious.
As Jay taught me,
Live Large and Love Big.
* I mashed ripe strawberries with soft butter, about 1:4 berries to butter, a dash of agave nectar and a fat pinch of salt.
