I have a confession to make. I'm hooked on good, organic olive oil so... I shop at Costco. Yes, Costco. Hey -- the toilet paper is cheap, they have Cabot creamery 3-year-old cheddar for $6 and really large sticks of salami.
Plus, it's a completely 'hipster free' zone.
The other day they also had lovely avocados from Chile. Really cheap -- maybe $.75 each. CeeLee found a bunch that was ripe so we had avocado snacks, avocado omelets and avocado corn soup. The soup recipe is snerched/adapted from the plastic handle on the sack of avocados.
16 oz chicken stock
2 ea avocados
1 ea onion, finely diced
2 cups corn (the recipe calls for one can of corn, drained, but I used some corn I had frozen from this summer)
Juice of one lime
salt to taste
Optional (but damn tasty) One cup cubed ham or 1/2 pound bacon, cooked and drained)
In a stock pot, saute the onion in olive oil. While the onions cook (till translucent, not brown), puree the avocados and chicken stock in a blender. Add the corn to the onions and cook until heated. Add the avocado/chicken stock mixture and bacon or ham and cook until hot.
Season to taste and garnish with lime and cilantro.
I'd have included a photo of the lovely green soup but between my house boy Mike and the BF CeeLee, the soup was gone before I could grab my phone.
Really yummy and so healthy.
