I woke up this morning craving bread. Which is entirely natural because I'm trying to cut some carbs out of my diet. Naturally I crave the things I should eliminate.
(sometimes I drive me crazy) Anyhoo, I didn't have enough time to make a yeast-raised dough, so I looked for a savory quick bread. I found a recipe I liked well enough on Allrecipes.
It was very good and perfect for tweaking. You could add jalapeños, change the cheese, add garlic. It's a good, simple base recipe. If you like cheese. And who doesn't like cheese?
1-1/2 cups whole wheat baking flour or AP flour
3 tspns baking powder
1 tsp salt
2 Tbsp butter
1 Tbsp olive oil
1 cup (or more) shredded sharp cheddar cheese (divided use)
3/4 cup finely diced onion - preferably yellow or red
1 ea egg
1/2 cup milk
Preheat oven to 400 degrees. Saute onion in olive oil until translucent. Set aside.
Grease an 8 or 9 inch round pan.
Combine flour, baking powder and salt. Cut in butter. Add 1/2 of the cheese.
Beat egg. Add milk and onions.
Add wet ingredients to dry, mixing only until completely combined. Put the dough in the pan and top with remaining cheese.
Bake for 25 minutes or until the cheese is beginning to brown.
Here is an idea of what the dough looks like. I used a whole wheat bread flour which is why it looks a little gritty. The texture was grand.
I also thought I'd have to add more milk but I didn't and it tasted fine.
I hate waking up at 7, knowing I have a long day ahead of me. Also knowing that I'll want to stay up late tonight. <sigh> I'm so excited about my evening plans that I could jump right out of my skin.
