I've been longing for a type of Chinese bun called a 'juicy bun' (AKA 'soup bun') for ages. I though it was a Hong Kong dish, but I may be wrong.
What is it? Imagine a perfect dumpling filled with searing, hot broth. Nibble, sip, slurp, bite. That is a soup bun.

They're made by wrapping dough around squares of broth-in-solid-form (fortified with gelatin). The buns are steamed and served.
They are perfectly delightful. I believe I may try to make them. After the holidays, when time is less precious.
