I found this weird recipe for sauerkraut soup somewhere -- back in March or April. I never made it but it's been on my mind ever since.
Well, I have onions in the pantry, chicken stock and bacon in the freezer and a lot of sauerkraut. Here goes nothin.'
Sauerkraut soup
1 cup sauerkraut
1/2 cup chopped onion, small dice
1 cup chicken stock
4 oz bacon, small dice
2 Tbsp butter
dash XVOO
2 Tbsp heavy cream
Modifiers: I added crimini mushrooms. Next time I'll add a bit of shredded kale or red cabbage.
Render bacon. Add butter (and a little olive oil to keep the butter honest) and saute onions until translucent. Add sauerkraut and chicken stock. Simmer for 15 minutes. Add cream, heat through and serve.
I must say it's delicious, if a little odd.
Now the modifications.... I chopped a couple of crimini mushrooms and hard sauteed them in butter. I finished them with salt, and threw 'em in the pot.
Really yummy and very easy.
