I had a rare and beautiful Sunday off today. So, Handsome & Brave came over for brunch. We were going to go out but -- ouch -- it's Father's Day so eating in a restaurant was out of the question.
He had a bit of bad news. It seems his housemate, Rose, is going through a rough patch. Rough patch/guy thing/love hurts... I knew I had a cure (or at least a balm) for that sort of ache.
I wanted H&B to carry something yummy home for her to nosh on. She liked the blueberry thing I made a few weeks ago, so I thought I'd make a crumble.
Mmmm, crumble -- crunchy crust, warm, sweet fruit -- maybe topped with ice cream? Alas, I was missing the only ingredient that every crumble recipe I perused included. Oats. I had no oats.
Ever persistent, I looked on the interweb and found a silly weight watchers recipe. I reversed the flour and sugar amounts and upped the butter and came up with the following using just flour, sugar and butter. OK and a lot of ♥.
Rose's Strawberry Crumble
1 pint super ripe strawberries (I used Hood's)
1/2 cup sugar (white or brown)
1/3 cup flour (AP flour)
1/2 stick butter plus some for greasing the baking dish
Preheat the oven to 350 degrees.
Mix flour and sugar. Toss two tablespoons over the berries, mix gently. Grease the baking dish, (use something small or two soup-bowl sized bowls) with butter.
Add berries. Top with crumble topping.
Bake 30 minutes.
