It's approaching nesting time; cooler weather, stews, soups and braises. I'm easing into the season slowly, mixing summer bounty with autumn staples.
Today? Roasted Beets. What? You don't like beets?? That's because you havent had beets. Try them, they're delicious.
Red beets with basil and peppercorns. I used equal parts white balsamic vin and water for both recipes.
Yellow beets with dill.
The resulting salad; escarole with roasted pimento vinaigrette, chevre, yellow beets.
The only downside of beets is the way they -- um -- vividly tint your bowel movements. Kinda creepy to peek into the (toilet) bowl and see a vibrant red poop. Gross, but true.
