What a busy day! I finished and processed the tomato juice and made dill pickles and Giardiniera. I also processed some of my red cabbage sauerkraut.
I only lost one jar; one of the pint jars with kraut in it (I left it in the photo). I made four quarts of pickles, four quarts of tomato juice, two quarts of Giardiniera and processed one pint of sauerkraut. I'm kinda bummed that I lost a pint of kraut but to lose only one jar out of 12 is pretty darn good.
Today, I try making a fresh/frozen fruit pie. I froze some Marionberries from the market. I'm going to pop them into a pie and see what happens. I'm also using the tin foil pie pans that the Fair requires to see if I have to adjust the baking times.
Why frozen fruit?
I want to buy berries now, before they get too sweet. Also, the pectin level is highest at the start of the season and I need the natural pectin in the fruit to make the pie filling set up correctly. If it works I'll pick up berries tomorrow and bake the pies on August 22.
It's true. I'm a pie nerd.
