Brought home some frozen lamb shanks home from my mum and sister's house. They have two freezers in their garage (and two cars) so they have lots of room to store food. Which is good because my mom loves discounted meat. You know, the stuff that's marked down, priced to sell. Lamb at Safeways is particularly good. My mum loves sale-priced meat and calles it "Used Meat."
Isn't that hilarious?
Anyway. I threw the shanks into a pot with a chopped onion, a handful of oregano from the fire escape, and water. Cooked those sucka's for four hours.
Seasoned the broth, picked the meat, and put it in the fridge. I probably have a gallon or so of strong, nutritous, strengthening meat broth.
Add hominy and you have a perfect meal.
