Portland has had a remarkably cool summer. Only a few days over 80. But, it is still summer on the calendar so I made cold soup. A luscious cucumber yogurt soup with a shot of curry powder. I made my own curry but any yellow curry or garam masala would work. For garnish, I used chopped hard boiled egg. Good stuff, this.
Curried Cucumber Yogurt Soup3-1/2 cups yogurt
1 cucumber, peeled, small dice
1/3 cup green onion cut on a bias
1/2 cup half-and-half
1 Tbsp chopped dill
1 tsp salt (or to taste)
1 tsp curry powder
hard boiled egg.
Note: If it seems too thick, thin with cold water. This soup is so yummy fresh, I can't wait to taste it in a few hours, after the flavors settle.
